I've recently dove into the realm of substituting in recipes for healthier outcomes.
May I present.....
Coconut Banana Bread!
I switched out some of the butter for applesauce, white flour for wheat flour, added ground flax seed and good intentions.
First of all, mash up the bananas that are looking a little rough. You know the ones you keep hoping your spouse will eat while you keep taking the prettier ones. And now would be a good time to get the oven preheating to 350.
Now throw in 1 tsp
Or I am just lazy and don't want to wash the extra bowl.
Do as you wish but over here I just put in the 1 and a half cups of wheat flour.
Also, I forgot to take a picture of the 1/2 cup of ground flax seed being added! It was a blonde day.
Pour the delicious smelling batter into a greased 9x5 loaf pan.
The only reason I knew the size is because the sticker was still on it from our wedding.

Coconut Banana Bread Recipe- Heaping cup of mashed bananas
- 3/4 stick of softened butter
- 2 eggs
- 1 cup sugar
- 1 tsp almond extract
- 3/4 cup applesauce
- 1/2 cup shredded coconut
- 3/4 cup walnuts
- 1.5 cups wheat flour
- 1 tsp salt
- 1.5 tsp baking soda
- 1/2 cup ground flax seed
Bake for one hour at 350.
