This salsa and I go way back. Way back to when I lived with my best friend and her husband and we would make a big batch and then sit around eating it....for days. It seriously produces a vat of salsa but you will eat every last bean. I must give Abby credit where credit is due for introducing me to this salsa. I have since modified it here and there depending on what I have in my pantry and whats in season. For today, May 8th 2012, these are the ingredients.
- 6 cans of any combination of your favorite beans and corn(I used 3 corn, 2 black eyed peas and one black beans)
- 4 oz can of chopped green chilis
- 16oz light italian dressing
- one medium onion
- one green pepper
- one red pepper
- one avacado
- cilantro to taste
- 2 tbs garlic powder
Also, there is so much fiber in that there bowl that it is gonna rock your world. Or your bathroom.
